Chocolate Peanut Butter Overnight Oats Recipe
While I dream of green smoothies and lazy morning pancakes on an almost daily basis after cycle touring for six months, I just couldn’t justify strapping my Vitamix to my bicycle rack (ha), and pancakes take too long when we’re packing our tent to beat traffic, daylight, or warm up from the cold.
Enter: overnight oats.
I’ve been making these at home long before we departed on a worldwide bicycle tour. They take only five minutes to make at night before bed and are ready to eat in the morning. They’re filling, healthy and most importantly, require almost zero effort.
We eat them every morning we ride and we have yet to grow sick of them. The key to avoiding overnight oat burnout is to regularly change up the ingredients. I carry a gallon-sized ziplock of homemade muesli that contains a variety of rotating essentials like nuts, seeds, grains, and dried fruit.
On a recent rainy ride through Bulgaria, we happened upon a little shop that sold freshly ground peanut butter. No sugars, no oils, no salt. Just ground peanuts. I hadn’t seen anything like it in months. I wanted to buy it all.
